The glycemic index (GI) measures how quickly foods raise blood sugar levels. The host explains that mixing high and low GI foods does not change the overall GI of a meal. Mechanical mixing of foods does not alter their chemical structure, and consuming high GI foods will still lead to rapid increases in blood sugar.
