Chicken Breast Roll: A Fitness-Friendly Recipe That Actually Looks Good
Bored of plain boiled chicken? This takes 15 minutes of prep, uses a baking sleeve and gelatin, and produces something you can actually serve to guests.
Boiled chicken breast is efficient. It's also the most boring food on earth if you eat it every day. This recipe takes almost the same effort but produces something you'd actually put on a plate without embarrassment.
What You Need
- Chicken fillet (however much you want to make)
- 1 packet of food gelatin
- Ground sweet red paprika
- Black pepper
- Salt
- Optional: garlic, fresh herbs, Khmeli Suneli spice mix
- Baking sleeve (or baking bag)
Method
1. Cut the chicken into small cubes. Use a sharp knife and a plastic cutting board. Size doesn't matter much — just consistent so it cooks evenly.
2. Season the cubes. Add the gelatin packet, two to three tablespoons of sweet paprika, black pepper, and salt. Add garlic or herbs if you want them. Mix thoroughly. The gelatin needs to be evenly distributed throughout.
3. Pack into the baking sleeve. Press the mixture in firmly and compactly — you want it shaped into a cylinder (you'll be slicing it later). Twist or staple the ends shut. Poke a couple of holes in the sleeve with a knife for ventilation.
4. Bake at 180°C (356°F) for 50 minutes. Put the sleeve directly on a baking sheet.
5. Cool, then refrigerate. Let it cool to room temperature, then refrigerate for an hour or two. The gelatin sets and holds the cut shape.
6. Slice and serve. Cut into rounds. Serve with mustard, horseradish, or garlic sauce.
Why the Gelatin
Gelatin binds the pieces together so the roll keeps its shape when you slice it cold. Without it you just have a bag of loose cooked chicken. With it you have something that looks intentional.
Nutritionally
It's essentially pure protein and lean. If you skip the yolk-based sauces and serve with something like spicy mustard, you're looking at a very clean protein source with good texture and actual flavour from the paprika.
