Q

Why is the simple vs. complex carbohydrate framework considered misleading?

A

The framework suggests that complex carbohydrates always produce gradual glucose responses and simple carbohydrates cause rapid spikes. However, this is not always the case; for example, white bread, a complex carbohydrate, can cause a rapid increase in blood glucose similar to that of glucose itself, while some simple sugars like lactose can produce a blunted response.

This is one answer. The complete system — the psychology, the biology, and the method — is in the book.
