What is the glycemic index (GI) and its limitations?

A

The glycemic index (GI) is a population-average measure that indicates how a specific food affects blood glucose levels in an average healthy person, using glucose as a reference. However, it oversimplifies carbohydrate effects by treating them as a single variable, disregarding factors like fiber, fat, protein co-consumption, individual microbiome differences, and food preparation methods.

This is one answer. The complete system — the psychology, the biology, and the method — is in the book.
