Several factors can systematically reduce the glycemic response of a mixed meal. These include the addition of fat and protein, which slow gastric emptying; soluble fiber that delays carbohydrate digestion; acidic ingredients like vinegar and lemon juice that inhibit gastric emptying; and the cooking and cooling of starchy foods, which creates resistant starch.
