The glycemic index measures the blood glucose response to a specific food eaten in isolation, at a standardized carbohydrate dose, typically 50g (1.8 oz) of available carbohydrate, averaged across healthy adults. This measurement provides insight into how a particular food affects blood sugar levels when consumed alone.
